ARC BY LUTE AMSTERDAM
Restaurants are opening up one after another in Amsterdam, all adding to a growing list of fine dining options we now have in Amsterdam. Our little city’s ever-changing food scene is a wonder to behold and as foodies we’re fortunate to witness the refinement of Dutch cuisine.
This year Dutch chef and restaurateur Peter Lute opened his new Arc by Lute. Located in Amsterdam-Oost, the restaurant is a delightful addition to Amsterdam’s dining scene. If you have visited De Kruidfabriek before, you may be familiar with Lute’s style. Ingredients are mostly locally sourced but dishes show a refreshing contrast of textures and flavours.
We go for the Arc lunch menu of four courses, starting with a cod dish with pear, kaffir lime and purslane. A beautifully light dish with hidden tangy notes that are perfect for the spring and summer season.
When the next dish arrives, charred prawn with Indonesian bumbu salad and bisque, we immediately fall in love with the fragrant bisque. I grew up with Indonesian cuisine and have always found that the bold flavours are difficult to incorporate in refined dishes. Don’t get me wrong though – give me bold, traditional Indonesian food any time! But I would love to see chefs play more with the exotic tones of Indonesian cuisine and do it so well it elevates a dish. Which I found it working here quite well!
For our main, we are served a smokey entrecôte with bear leak foam and portobello. One of the few meat dishes on the menu. A few years ago this would have caused an uproar but nowadays it has become much more standard to focus less on meat. And I have to say, I don’t mind. But the smoked entrecôte was mighty good though!
We end on a light note again – a matcha cremeux with a forest fruit sorbet, tarragon and fennel.
Arc by Lute is a place where you want to go to for lunch over the weekend or dinners on Friday nights. The lounge / bar area offers the best seats under the sun (there’s a terrace outside as well for those sunny days coming). At Arc by Lute it’s all about enjoying refreshing flavours – nothing too heavy or creamy. Just clean and refined.
