Last weekend was the 25-year anniversary of restaurant Hosokawa in Amsterdam. It was in 1992 when chef Hiromichi Hosokawa started the restaurant and to this day it remains one of Amsterdam’s popular restaurants for sushi.
We’ve covered Hosokawa’s sushi menu here in the past. Chef Hiromichi Hosokawa is a master of his craft and his passion absolutely shines through in his dishes.
At the anniversary dinner we tried the restaurant’s teppanyaki menu, consisting of a beautiful straw-grilled tuna tataki with chiri-zu (it doesn’t get better than this) and a mind-blowingly delicious wagyu nigiri with black sushi vinegar and truffle soya (wagyu never fails). For dessert, a matcha cream puff (a nod to their new-to-be-opened matcha bar in de Pijp) with yuzu sherbet and mojito foam.
